The product
The Olio Extravergine di Oliva DOP Seggiano is produced with Olivastra Seggianese cultivar olives whose percentage has to be at least 85%. This EVO oil is green with golden yellow shades and has a fresh, clean fruity aroma of olive, with herbaceous notes of artichoke and white fruit aromas. As for its taste, the Olio Extravergine di Oliva DOP Seggiano is clean, neat, with herbaceous notes that follow the olfactory tones, a little bitter and pungent, but harmonious. The characteristic which sets it apart from the other EVO oils is its maximum total acidity not exceeding 0.50% and a high level of shelf life.
The Olio EVO DOP Terre di Siena is produced with olives of at least two of the following varieties: Frantoio, Correggiolo, Leccino, and Moraiolo. They have to be present in the olive groves individually for at least 10% and jointly for at least 85%. Other varieties in the olive groves can be used for at most 15%. Each year, the olives must be harvested directly from the tree between 1st October and 31st December. The milling must take place within 72 hours of the olives harvesting and 24 hours of the deposit at the mill, after washing the olives with water at room temperature. The obtained oil must be bottled in the production area in metal cans of 5 liters or bottles with a capacity of up to 5 liters.
The Olio EVO DOP Terre di Siena colour can range from green to yellow with slight variations over time. It has a smell and a taste with bitter and spicy notes and an acidity not exceeding 0.50%.

The Olio Extravergine d’Oliva DOP Seggiano is produced in the following municipalities: Arcidosso, Castel del Piano, Castell’Azzara, Cinigiano, Roccalbegna, Santa Fiora, Seggiano, and Semproniano, facing the Mount Amiata, on the north-west side.
The Olio Extravergine d’Oliva DOP Terre di Siena production area corresponds to the administrative territory of the Siena province, excluding the Chianti Classico wine production zone (Radda in Chianti, Gaiole in Chianti, Castellina in Chianti and partially that of Castelnuovo Berardenga and Poggibonsi).

APOT – Associazione Produttori Olivicoli Toscani
The “Associazione Produttori Olivicoli Toscani” (APOT) collects 3135 olive growers who produce, on average, 19000 ql of olive oil annually and who operate in the Arezzo, Grosseto, Livorno, Lucca, Pisa, Pistoia, and Siena provinces.
