P.D.O. – Protected Designation of Origin
It is a European mark of origin which is attributed to those foods whose peculiar characteristics depend mostly on the territory where they are produced. To obtain a PDO product, the stages of production, processing, and preparation must take place in a defined geographic area. These important factors allow obtaining a unique product impossible to imitate outside of that particular area of production.
P.G.I. – Protected Geographical Indication
It indicates a European mark of origin that is recognized to those food products for which the specific quality, reputation or other characteristics strictly depend on the ability of production, processing, and preparation developed in a specific geographic area. To obtain the PGI, therefore, at least one stage of the production process must occur in a particular area.

T.S.G. – Traditional Speciality Guaranteed
European mark of origin that is recognized to an agri-food product with a specific character intended as an element or a set of features which, due to their qualitative and traditional properties, clearly distinguish that product from other similar ones. We, therefore, refer to products obtained according to a typical production method of a particular geographical area, in order to protect their specificity. Products whose specific character is linked to their provenance or geographical origin cannot obtain the TSG mark; this aspect distinguishes the TSG products from the POD and the PGI ones.
